Why I prefer making fish soup rather than fish pie:

Although I adore Fish Pie with fish cooked in a creamy sauce and a crispy potato crust on the top. I have never been able to get right the balance of sauce to ingredients. Often I have created either a ‘watery’ pie  ( with the fish still able to swim in my sauce become it is so thin because the fish wasn’t cooked and drained first) or a stodgy dry sludge ( where the fish was well cooked but my sauce needed more moisture from the fish and ingredients).

I recently came across this lovely chunky soup from Waitrose –

Here is my Chunky fish soup but written for a Thermomix TM6. (It can be altered for TM5 or TM31 users but put the blades on reverse mode and a slow stir speed so it doesn’t break the fish up too much.)  It reminds me of earthy Spanish cooking as it uses a rich tomato sauce as its base so it is low in calories compared to using a heavy cream sauce. I love it as it is so nutritious, fast and quick to cook but retains wonderful flavors. Use the Thermomix TM6 blade cover to protect the delicate fish as you poach it in the soup.

  • TM6
  • TM6 blade cover


  • 200g Fish pie mix
  • 40g sunflower oil
  • 1 100g onion
  • 2 200g carrots
  • 1 100g courgette
  • 2 garlic cloves
  • 227g tomatoes or tomato sauce
  • 500 g fish stock
  • parsley
  • chives
  • salt & pepper
  • Tabasco sauce


  • Place parsley and chives into mixing bowl and chop 3 sec/speed 7.
  • Transfer into a small bowl and set aside.
  • Place onion and garlic into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  • Add carrot and courgettes and chop 5 sec/speed 4. Scrape down sides of mixing bowl with spatula.
  • Add sunflower oil and cook 5 min/100°C/speed 2
  • Pour out ingredients into another bowl Insert blade cover over blades.
  • Return vegetable mixture, tomatoes, stock and herbs and cook 10 min/105°C/speed
  • Add fish and Tabasco® (optional) and cook 3 min/98°C/reverse speed - stir. Test fish to ensure thoroughly cooked through (add extra 3 minutes if unsure).
  • Remove bay leaves. Add salt and pepper to taste. Using a soup ladle, carefully transfer soup into a bowl. Serve garnished with extra parsley and dash of cream.
